Coconut Raisin Granola

Coconut Raisin Granola is the perfect breakfast, quick to make, incredibly delicious and chockful of tropical flavor. Best of all is the best starting recipe and you can totally mix and match the add-ins. One of my favorite new add ins for almost anything in my kitchen is the new essential oils from Young Living.

For a long time, there was a division of essential oils users. Many users believed that you could not ingest oils, while others did. Ingesting Essential Oils

An important note is that if you are cooking and/or ingesting essential oils, they need to be therapeutic grade. Make sure to check the label and the distributor before making a purchase, because not all essential oils are the same. You can read more about Young Living and why I use them here.

But for now…let’s get back to breakfast.

I am always on the lookout for breakfast recipes that are easy and quick, the type of recipe that can be made ahead you know? Granola has become my go to. The main reason? It’s filling and way more healthy than traditional cereals, but it’s also relly easy to make.

You basically need to mix a couple of things together and then bake it for a little while. The other great thing about granola is that you can play with the flavors a ton and create different combinations.

This coconut raisin granola, for example, is tropical and crunchy + it works like the best starting recipe if you are just entering the granola world. Just swap the coconut and raisins for whatever you have on hand. Dried cranberries, pecans, and chocolate pieces, the combinations are really endless.

Once it’s done just pack it in an airtight container. And it will last for up to 2 weeks. If that’s not incredible then I don’t know what is. What I do is that I make a huge batch and then just have it for breakfast every time we are running late, or every time we are craving a delicious, filling, and crunchy breakfast. Also, keep a bag at your desk. Or toss , gym And do not forget the kids. Just toss in a bag for lunch or soccer bag for after practice.

It goes deliciously well with yogurt, milk or straight out of the jar. That is breakfast I can get excited about! Yay for Coconut Raisin Granola.

Ingredients

3 Cup regular oats

½ Cup walnuts

Toss in ½ Cup chopped almonds

½ Cup raisins

1 Tbsp brown sugar

1 Tbsp nutmeg

¼ Cup maple syrup

2 Tbsps coconut oil

Pinch of salt

¼ Cup shredded coconut

2 drops Young Living Vitality Cinnamon Bark essential oil. You can buy it here.

Directions

First, Preheat oven to 300°F and use cooking spray on a baking sheet.

In a bowl mix the oats, walnuts, almonds, raisins, and nutmeg.

Using a a different bowl, mix the maple syrup, coconut oil, brown sugar, and salt. Stir well and transfer to the oats bowl and mix it in.

And then lay the mix over the baking sheet.

Then bake for 25 minutes or until golden.

Remove from the oven and set aside to cool down.

Serve in bowls, top with the shredded coconut, and enjoy.
